For Viking Octantis or Polaris, pack around the destination and the expedition day before adding dinner clothes. Antarctica, the Arctic and the Great Lakes do not need identical wardrobes, even when you are sailing on the same expedition ship.

The Viking Expedition FAQ specifies elegant casual for evening dining, performances and special events: a dress, skirt or slacks with a blouse or sweater, or trousers with a collared shirt. Jackets and ties are optional; jeans are excluded. World Café remains casual, including jeans and boots, after 6 p.m. The same FAQ says onboard dress is more casual in polar regions and that guests receive a detailed packing list.
For a non-polar trip, pack a repeatable outfit that meets the evening standard. For a polar voyage, follow Viking's itinerary-specific packing instructions and confirm any restaurant requirements before leaving home.
Separate provided gear from your personal layers
Viking’s expedition equipment overview describes equipment for relevant excursions and a keepsake expedition jacket for Antarctica or Arctic itineraries. Its FAQ identifies access to boots, waterproof pants and binoculars, and says non-polar itineraries do not have jackets available for use. Bring your own suitable coat for those routes when needed.
Check the supplied equipment list before buying boots or outerwear, and ask about fit if you use orthotics or need a particular size. Bring the personal layers and socks that work with that equipment, plus comfortable indoor shoes.

After an outing, separate damp clothing from clean items and return borrowed equipment as instructed. If you plan to photograph wildlife or scenery, practice operating your camera with the gloves you intend to wear.
Plan for the travel days as well as the expedition
Think through the whole journey from home to the embarkation point. You may need comfortable airport clothes, a layer for a hotel stay and room in the return bag for equipment you keep.
